Hi Eric,
Newbie questions concerning install
1) Is it possible to change sql servers without doing a complete install. (or is it easier to reload?)
2) Does Sharepoint need to be on the Biztalk server or can it reside on a separate server?

1. You don't need to completely uninstal, just open up the Configuration Tool and click the unconfigure button. Then close it and open it up again and configure it to point to the new database.
2. SharePoint does not need to be installed on the same server as BizTalk, you simply need to point to a valid SharePoint install during the setup process.
